Curry Goat Pizza Recipe

Curry Goat Pizza

For this recipe,  follow my Curry Goat Recipe. This Recipe uses the leftovers/ you can make the Recipe from Scratch. If you use leftovers, be sure to reheat the goat and redevelop the gravy as you’ll need gravy as the sauce for the base of this Recipe as it does not use Pizza sauce.

 

Pizza Dough Recipe

Ingredients you’ll need

370g warm water (heat for 20 seconds in the microwave when ready to use; this is important to activate the Yeast)

590g flour (split into two portions; 1 portion 390g, 1 portion 200g)

4g of Honey (you can use sugar, I just prefer Honey)

2g Active dry Yeast

12g salt

17g Olive oil

 

Step 1

Mix the Honey/sugar in the warm water and let sit for 10-15 minutes to activate the Yeast. You’ll know the Yeast has activated when it starts to bubble and grow in size (watch the tutorial @cityeatsca on Instagram. I will also be sharing a video tutorial that shows the Step by Step of how to prepare the dough to get the best crust).

 

Step 2

Combine the Yeast with 390g of the flour. Mix well by hand and incorporate. It will look like a slurry and a bit runny, don’t worry, just mix then start pouring the rest of the flour, salt and Olive Oil  and continue to mix by hand. Once combined, dust a surface, remove the dough from the pan and knead for 15 minutes. The dough should get smoother as you need and stretch. After 15 minutes, shape the dough into a ball rolling it towards you by by dragging the dough on the surface to tighten the skin and smooth the dough ball.

 

Step 3

Let the dough bulk ferment (rise) for 1 hour by placing in a clean mixing bowl. Before putting the dough in the bowl, add Olive oil to the base to coat and then sit dough into the bowl. Cover with clear plastic Saran Wrap

 

Step 4

Split the dough into 2 halves, then spilt each half into 2 for a total of 4 balls, each weighing between 220-240g and let proof for 6-8 hours (flour the base of a container that’s large enough to hold the dough without each half touching, when it grows in size by 2/3 times.  

 

Preparing the dough for the Pan

PREHEAT OVEN TO BROIL ON HIGH

 

Step 1

 

Drizzle Olive Oil on surface, and use both of your hands to press down repeatedly on the dough to make a circle, without touching the edges to make sure that the crust stays in tact. Stretch the Pizza dough to the size of your Cast Iron Pan.

 

Step 2

Dust a Plate or Pizza Pan that’s big enough to hold the stretched dough with flour and transfer so the dough can be easily transferred to the Cast Iron. Build your Pizza. I spread Curry Goat Gravy on the base of the dough, then I did Parmesan Cheese (use your cheese of choice), Fried Ripe Plantains, Curry Goat, Gravy and more Cheese.

 

Step 3

Oil a Cast iron pot and on the stove and Slide Pizza Dough from the plate to the Pot. Use a Spatula to check the bottom of the Pizza for doneness. If it has light brown spots at the bottom, it’s ready fo go into the broiler.

 

Step 4

Your Broiler should have already been preheated to high. Place Pizza into the top rack of the Oven  and keep an eye on it, it should only take around 3 minutes to cook into a puffy, golden brown Pizza.
