Oxtail Recipe

 

Ingredients you’ll need

 

2 lbs Oxtail

1/4 White Onion

3 Stalks Escallion

4 sprigs Thyme

1 tablespoon Ginger

4 cloves Garlic (minced)

1/4 Red Onion

1/2 Scotch Bonnet Pepper

1/4 Tricolour Bell Pepper

2 tablespoon City Eats Meat Seasoning (Salt free)

2 tablespoon City Eats AlL Purpose Seasoning (Low sodium)

2 tablespoons Olive Oil

8 cups of water

 

Step 1

Chop and mince all Veggies and prepare Oxtail by trimming to remove excess fat and rinsing in Vinegar/ lemon water to clean.

 

Step 2

Season Oxtail with Onions, Escallion, Ginger, Thyme, Scotch Bonnet Pepper, City Eats Meat & All Purpose Seasoning but save half of the Red Onion and Bell Peppers to Garnish later when Oxtail is cooked. Rub in will Olive Oil to Season Oxtail. For best results, Let sit to marinate for a minimum of 2 hours up to 24 hours.

 

Step 3

This Recipe uses caramelized sugar to make growing caramel. You can also buy this at the store however if you don’t have the browning you can make your own by heat a tablespoon of sugar in oil over medium heat. Be careful not to burn.

 

Step 4

Add in Oxtail, and sear each piece on each side for approximately 2 minutes until each piece absorbs and retains the caramel colour.

 

Step 5

Pour 4 cups of boiling water in the same bowl with the Veggies that you seasoned the Oxtail and pour into the pot with the Oxtail. Cover and let cook for 1 hour. After 1 hour most of the water will evaporate so add 4 more cups of water and cook for another hour.

 

Step 6

After that hour, season with City Eats All Purpose and Meat seasoning to your desired taste if it needs more and add in extra Bell Pepper and Red Onion to Garnish. Cover and cook for an additional 20 minutes.
